A fresh water dishwasher is the best washing system in professional dishwashing in terms of hygiene and performance. Washing is done with fresh water in each wash cycle, with the automatic addition of detergent and rinse aid in the correct quantities. The wash water never comes into contact with the rinse water. Thanks to the complete replacement of the water in the tank, it is possible to wash dishes with very different types of dirt in succession. In this way, it is possible to wash coffee cups and then, in the next wash cycle, dishes in which fish has been eaten, without any contamination. In special cases, such as the one in this example, in a traditional machine, the percentage of dirty water stagnating in the tank can indeed give off an unpleasant smell and provide poor washing results. A fresh water dishwasher works differently:
1 - Wash cycle: with the water from the previous rinse, which is at the right temperature and free from residues from previous washes. The amount of detergent required for each cycle is automatically dosed with the appropriate pump. This eliminates unnecessary waste and excessive concentrations of detergent, giving the product its own character.
2 - Drip: lasts only a few seconds, but is necessary for the water circulating in the appliance to collect in the relative tank.
3 - Drain: after the wash cycle, the water is drained and is ready for rinsing.
4 - Rinse cycle: The volumetric rinse (without timing) guarantees proper rinsing even with low water pressure. It is done at 90 °C with fresh water from the boiler with the right dose of rinse aid. The water is then filtered into the tank and used for the next wash cycle.
